Tiramisu

Tiramisu is a classic Italian dessert known for its rich and creamy layers of coffee-soaked ladyfingers and mascarpone cheese. Here’s an authentic recipe for making traditional Tiramisu:
**Ingredients:**
For the Cream Mixture:
– 6 large egg yolks
– 3/4 cup (150g) granulated sugar
– 1 cup (240ml) mascarpone cheese, at room temperature
– 1 1/2 cups (360ml) heavy cream
For the Coffee Soak:
– 1 1/2 cups (360ml) brewed espresso coffee, cooled to room temperature
– 2 tablespoons coffee liqueur (optional)
– 1 tablespoon unsweetened cocoa powder, for dusting
– 24-30 ladyfingers (Savoiardi biscuits)
**Instructions:**
1. **Prepare the Espresso Coffee:**
– Brew the espresso coffee and allow it to cool to room temperature. You can also add coffee liqueur to the coffee if desired.
2. **Separate the Eggs:**
– Separate the egg yolks from the egg whites. You will only need the egg yolks for this recipe.


3. **Make the Cream Mixture:**
– In a heatproof bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.
– Place the bowl over a pot of simmering water (double boiler) and continue to whisk for about 5-7 minutes until the mixture thickens and reaches a custard-like consistency. Remove from heat and let it cool to room temperature.
4. **Add Mascarpone:**
– Gently fold in the mascarpone cheese into the egg yolk mixture until well combined. Be gentle to maintain the lightness of the mascarpone.



5. **Whip the Cream:**
– In a separate bowl, whip the heavy cream until stiff peaks form. Be careful not to overwhip.
6. **Fold in the Whipped Cream:**
– Gently fold the whipped cream into the mascarpone mixture until smooth and well incorporated. This creates the creamy filling for the Tiramisu.

7. **Assemble the Tiramisu:**
– Dip each ladyfinger into the cooled espresso coffee (and coffee liqueur, if using) for about 1-2 seconds, making sure not to soak them too long, as they can become mushy.
– Arrange a layer of soaked ladyfingers in the bottom of a serving dish or individual dessert cups.
– Spread half of the mascarpone cream mixture over the ladyfingers.
– Repeat with another layer of soaked ladyfingers and the remaining cream mixture.





8. **Chill:**
– Cover the Tiramisu with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the dessert to set.
9. **Dust with Cocoa Powder:**
– Just before serving, dust the top of the Tiramisu with unsweetened cocoa powder using a fine sieve or sifter.
