Turkish rice pudding, known as “Sütlaç,” is a creamy and comforting dessert enjoyed in Turkey and other parts of the Middle East. It’s characterized by its velvety texture and a subtle hint of vanilla and cinnamon. Whether it is served plain or with other toppings like walnuts, the essence of sutlac lies in its creamy texture and the delightful caramelized flavor achieved through the baking process.
Here’s a classic recipe for making Turkish rice pudding:
**Ingredients:**
– 1/2 cup (100g) short-grain rice (such as Arborio or pudding rice)
– 4 cups (1 liter) whole milk
– 1 cup (200g) granulated sugar (adjust to taste)
– 1/4 cup (30g) cornstarch
– 1 teaspoon vanilla extract
– A pinch of salt
– Ground cinnamon or walnut for garnish


- Soak the rice in cold water for about 20-30 minutes, then drain.
- In a medium-sized, heavy-bottomed saucepan, combine the soaked and drained rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and has absorbed most of the water. Stir occasionally to prevent sticking.
- In a separate bowl, mix the cornstarch and a few tablespoons of milk to create a smooth paste, then pour in a large saucepan. Combine the remaining milk, sugar, vanilla extract, and a pinch of salt. Heat the mixture over medium heat, stirring constantly, until it begins to simmer.
- Once the milk mixture is simmering, gradually add the cooked rice to the milk while stirring continuously.
- Reduce the heat to low and continue to cook, stirring frequently, for about 15-20 minutes. The rice pudding will gradually thicken and become creamy. Be patient and avoid rushing this step.

6. Pour the pudding it into individual ramekins or clay oven dishes.
7. Preheat your oven’s broiler function (the top). Ensure the oven rack is placed in the highest position to allow the top of the sutlac to caramelize quickly.
8. Put in oven. Once the top is caramelized to your liking, remove the ramekins or clay dishes from the oven and let them cool for a few minutes before serving.
9. Serve plain or garnish with nuts or cinnamon.
